Lightened Up Healthy Broccoli Slaw

Doesn’t broccoli slaw just take you back to family parties?! I know for me, our Pope Family BBQs would always have a good broccoli slaw – but not as good FOR you as this one is! As always, with a few better for you swaps I was able to make this just as delicious and tasty as the original one. Let’s dive right in..

Healthy Broccoli Slaw Details!

I was able to keep the ingredients very minimal in this recipe, which I loved! Let’s go through each of the ingredients so you can learn why I chose each of these items and of course the item specifics.

  • Broccoli Slaw Mix: PurelyPope Healthy Broccoli Slaw RecipeWe had to start off with the base, right? I bought the broccoli slaw pre-chopped mixed with carrots. This is the easiest way, but you could also use broccoli & a food processor too if desired.
  • Mayo: Instead of regular old mayo, I like to use avocado mayo. Avocado mayo tends to be about 1/2 of the calories than regular mayo and is packed with healthy omega-3 fats.
  • Sweetener:  Broccoli slaw always has a hint of sweetness, but you knew I wasn’t going to use refined sugar for HEALTHY broccoli slaw, right?! I opted for monk fruit, which has a very low glycemic index and 0 calorie!
  • Vinegar: I chose to use apple cider vinegar, which helps with good gut bacteria and getting in good antioxidants!
  • Special Touches: The special touches involved pine nuts and raisins. Feel free to sub out craisins or any nut your prefer here. For the dried fruit, just make sure there is no additional added sugar or syrup – it should just be the fruit on the label!

Not gonna lie, this was gone in about 1 hour in our house. I’m definitely going to have to make this again ASAP, I’m craving the healthy broccoli slaw as I’m writing this post it’s so good!

Ingredients

  • (1) 12oz package Broccoli slaw (carrots/broccoli)
  • 1/4 c pine nuts
  • 1/4 c raisins
  • 1/2 c avocado mayo
  • 2 tbsp apple cider vinegar
  • 1 tbsp monk fruit
  • Salt & pepper, to taste

Instructions

It’s Slaw Season!

  1. Add broccoli slaw, pine nuts & raisins to a large bowl & mix well.
  2. In a small bowl, whisk together mayo, apple cider vinegar, monk fruit, salt & pepper.
  3. Pour dressing over broccoli slaw, mix & enjoy!
